Recipe for making a special apple pie

Apple pie is the queen of homemade desserts.
How many times have we eaten it in the afternoon, fresh from the oven, or at breakfast before going to school?
Few ingredients are enough to relive one of the most cherished memories of our childhood and you will find no other excuse to postpone its preparation because cooking a delicious apple pie, like those made with love by your grandmother or mother, is really simple!
The original recipe for apple pie involves the use of butter, milk, eggs, flour, baking powder and apples.
There are many recipes in which “classic” ingredients are replaced with other less caloric ones; even in those you know that "respect tradition" there are infinite differences in the doses and some variations in the preparation process.
You may be wondering how this recipe is different, how this apple pie would be "special".

You may be reluctant to change your family recipe but trust this little-known and very dated recipe and we assure you that everyone will ask you how you made an apple pie that melts in your mouth!

Special apple pie ingredients

  • 150 grams of flour 00
  • 130 gr of butter
  • 100 grams of sugar
  • 2 eggs
  • 250 ml of milk
  • 4 apples (preferably renette or golden)
  • 1 sachet of baking powder
  • 1 pinch of salt
  • 2 tablespoons of sugar
  • 2 tablespoons melted butter

How to make a special apple pie

  1. Take a bowl and add the soft butter (then removed from the fridge for at least half an hour and left to "warm up" at room temperature) and sugar.
Beat them by hand or with an electric whisk until you get a cream.
  2. Add one egg at a time to the dough and continue to whisk to mix the ingredients well.
  3. Put the flour, baking powder and a pinch of salt in a flour sieve.
To insert these ingredients into the mixture in a practical and fast way, simply operate the sieve directly above the bowl alternating with the milk.
Pour the milk in small quantities to prevent the electric whisk from splashing it, dirtying you and the kitchen worktop.
  4. After finishing with the flour, pour in the remaining milk and blend very well so as not to form lumps. The dough will have a rather "liquid" consistency but don't worry because this is exactly the result you need to get.
  5. Pour the mixture into a 26 cm cake pan with the hinged opening greased with butter.
  6. Wash, peel the apples and cut them into thin slices (about 2-3 millimeters) and sink them vertically into the dough starting from the outer edge and ending up in the center to form the classic "ray" shape, typical of apple pie.
  7. To make your apple pie more beautiful, before baking it pour over two tablespoons of melted butter and sprinkle it with two tablespoons of granulated or brown sugar.
  8. Bake the cake in a preheated oven at 180 ° C, ventilated, for about 35-40 minutes.
Remove from the oven and serve warm.

If you want to prepare a dessert that is also a cuddle for our loved ones Collect the ingredients and the kitchen whisk and immediately set to work to prepare a truly unforgettable apple pie.
Enjoy your meal!

Light apple heart cake: quick and easy recipe

For this light apple heart cake I was inspired by a recipe my mother made us quite often when we were little. In his recipe there was sugar, white flour and butter, in my recipe there is coconut sugar, spelled flour is seed oil. Obviously, hers was of indescribable goodness, also because she used fragrant apples, picked directly from the trees in our garden, but even my apple pie turned out very good, with a particular taste.
Before slicing the cake, my mother whipped the fresh cream and spread it on top, but I spread the cake with Greek yogurt cream is peanut butter.

This cake seems to me the ideal dessert to prepare on the weekend, when you don't have to celebrate something special, but maybe your friends (with children) come to visit you and you want to bake something greedy and undemanding.

You can also customize the cake according to your tastes: use another type of flour, flavor with lemon zest, add raisins and walnuts to the dough and serve simply with a thread of honey or maple syrup.

If you also want to prepare the apple heart cake, you will find it below the ingredients and the steps to follow.

Apple is perhaps the most classic of pies. An easy recipe that has always inspired experienced chefs, but also novice pastry chefs. It conquers for its simple and intense taste and is among the most loved recipes by children, but also by adults. In addition, it is prepared with a very versatile ingredient: apples. This extraordinary fruit has been the protagonist of myths and legends for centuries. The apple of Eve, the fruit of original sin, the princely apple of Snow White, the brilliant apple of Newton which, according to legend, would have inspired the formulation of the theory of universal gravitation.

Apples, a sinless fruit

The greatest charm of the apple lies in its concreteness. There are summer apples and winter apples, which guarantee a prolonged seasonality and which can also be kept for long periods. Furthermore, apples have a unique versatility in the kitchen, adapting to any culinary use. They are good for dressing a fresh salad and add a touch of flavor to savory dishes, such as roast suckling pig with apples. Indeed, a few years ago the apple diet became one of the most popular on the web and among the stars. However, it is better to use apples as a hunger breaker, rather than as a meal, or as an ingredient in tasty and healthy recipes.

  1. This recipe is one of the most classic, a soft and tasty apple pie without milk, embellished with cinnamon, the intense flavor of rum and the taste of almonds, however optional ingredients. The first step is the simplest one, turn on the oven in static mode at 180 °. This operation must be carried out in advance so that the temperature is reached when the cake is baked.
  2. Wash the melts well. This is an important step even if they need to be peeled, as peel residues or impurities may still remain on the hands.
  3. Peel the apples, cut them into slices or into small pieces, then put them to macerate in a glass of rum, turning from time to time. The ideal would be to leave the apples in marinade for about two hours, but less time is needed, that of preparing the dough. This is also a good trick to keep them from turning black. In this regard, if you want to avoid rum you can use it instead of lemon or orange juice.
  4. Eggs, better if used at room temperature, must be processed by separating the yolks from the whites. Then divide the whites from the reds. In a bowl, beat the egg yolks with the sugar and vanilla with the help of a whisk or even better a whisk. The mixture must be very frothy, incorporating air, to give the final product a soft consistency.
  5. Separately, whip the egg whites until stiff. Also in this case it is good to use an electric whisk, or a planetary mixer. Remember that to beat egg whites well it is important that the container in which they are placed is not contaminated with residues of yolk, water or other. Also beware of any pieces of shell that could fall into the boule, infecting the entire recipe.
  6. Melt the butter in a bain-marie or in the microwave, taking care to set it on minimum power to prevent the product from turning brown.
  7. Add the melted butter to the mixture of egg yolks and sugar. Then add the flour, possibly sifted, and the baking powder. Incorporate all the ingredients well.
  8. Add the apples with the rum to the mixture of egg yolks and flour, then the cinnamon. Only at the end should the egg whites be inserted until stiff, taking care to incorporate them very delicately into the dough. For this operation, a marisa, also known as a spatula, is best, moving the dough from the bottom upwards while turning the bowl with rotating movements.
  9. When the dough is ready, grease and flour a round cake pan with a diameter of 24 cm and pour the cake mixture into it. At this point, if you want, you can add the almond flakes.
  10. Bake the cake in the hot oven, which will have reached the temperature by now. Cook for 40-45 minutes. Before taking the cake out of the oven, always test the toothpick to check that it is cooked. You can use a toothpick or even a spaghetti to tease the cake and see if it is cooked to the right point. When the toothpick is dry and clean you can take your cake out of the oven.
  11. If you like, you can sprinkle it with powdered sugar, or perhaps with a caramel made with lemon juice and sugar.

The extra advice

Leavened desserts are generally cooked using the static oven. The ventilated mode speeds up cooking, but can make the cake excessively dry, also affecting the leavening process of the cake. The air from the fan, in fact, can cause the compound to grow unevenly.

Apple desserts

Without a doubt, the recipes in which these fruits offer the best are the sweet ones. It is no coincidence that there are versions of all kinds of apple pie. There is the shortcrust pastry tart, better known as Apple pie.
Then there is the classic apple strudel, one of the best known Italian versions of this dessert, which can be classified as a light apple pie. The original recipe, in fact, does not require the use of butter for the dough, but requires the addition of only 2 tablespoons of oil.
What about apple fritters? Perhaps the simplest way to turn fruit into the tastiest of sweets.
However, the most popular recipe is the soft apple pie, perfect for breakfast or a tasty snack. In its classic version the ingredients are few and simple. Eggs, butter, sugar and flour are added to apples and flavorings such as cinnamon and rum. But there are equally valid variations on the theme, such as the recipe for apple pie with oil, therefore without butter, or that of lactose-free apple pie. Many of which are also diet recipes. To prepare a good apple pie you just need to be inspired by your cravings and decide which version to try.

Which apples to use for apple pie?

Renette or golden apples? Pink Lady or Fuji? Notwithstanding the fact that nowadays it is possible to find practically any type of apple for sale at any time of the year, it is advisable to distinguish well the variety chosen based on its characteristics and flavor. Here is a small handbook that will help you decide which apple pie to cook based on the apples you prefer or have available.

Rennet apple

Renette apples are absolutely the best for any type of apple pie. These are, in fact, not very juicy apples, which do not lose water during cooking while maintaining the right consistency, and which have a slightly acidic taste that softens during cooking. Pies, strudels, biscuits or soft yoghurt cakes take full advantage of this variety of product.

Golden delicious apple

Golden delicious is a very juicy and sugary apple, which is why it is better not to use it in pies. However, it goes very well for the more classic grandma's apple pie, the soft and tall one so to speak. Attention, however, to the level of maturation. Those beyond age have the great defect of becoming irremediably floury.

Fuji apple

Fuji apples are probably the best to bite. Crunchy, juicy, flavorful, but not too watery, these apples go well with the filling of a classic Apple Pie, but are less suited to strudel.

Stark delicious apple

The stark delicious apple is very sweet and has a firm but slightly watery texture, making it suitable for tall, soft and slightly moist apple pies. It is also perfect for cakes with special flours, such as almond flour, which retain water and give them a new flavor.

Annurca apple

The annurca apple is a prized variety typical of Campania. It is an apple that is characterized by its nutritional and organoleptic properties, as well as by its intense taste. It does not go very well in cake recipes, better to use it to prepare a jam, a fruit juice or a liqueur called nurchetto.

Quince is very sour and it is difficult to eat it raw. Its sour taste is completely sweetened during cooking. You can use the quince to prepare decoctions, jams or a classic quince.
